Cascara means cover in Spanish. It refers to coffee cherry peel that retains pieces of flesh from the fruit. When the coffee cherry goes through the peeling machine, where the skin is separated from the bean and is left to dry, we are left with what we call Cascara! From the dried pulp we get from the cherry, we obtain a particularly aromatic drink that is both sweet and fruity and that is neither a coffee nor a tea. This is Cascara.

Cascara is obtained from the Arabica varieties: Caturra and Catuai and is hand-picked by local producers.

Although cascara is made from the coffee cherry, it does not share the same taste traits as coffee, as it contains less caffeine.

Because Cascara is made from the cherry and not herbs we can easily place it in the category of refreshment that come from fruit.

So if you are in the mood for something that is delightful, refreshing and different and at the same time like nothing you have had before, then all that you need to do is try this unique and curious señora.

And what better way to get to know her better, than taking her home and have her amaze you with her rare characteristics.

We provide you with a summer recipe that will make hot summer days exceptional.

You will need 600ml water/ 40g Cascara and of course the necessary utensil for the job.

The Hario FIB is the perfect appliance for making iced tea and herbs. Place the Cascara in the bottle filled with water at room temperature (15-20°C), place it in the fridge and “forget” about it for 2 to 3 hours (depending on the required intensity in taste), remove the leaves and serve in a tall ice-filled glass, so u can enjoy your Cascara drink in all its greatness…Naturally from Coffee Island Coffee Roasters.
