They are people with whom we don\u2019t share the same culture, but the same passion. The love for coffee, which allows us to proudly present another select and unique taste from El Salvador.<\/p>\n<p><!--more--><\/p>\n<p><strong>Another family, becomes part of ours!<\/strong><\/p>\n<p>Our continuous quest for new and exciting coffees led us to a meeting with another important family. The Pacas. Meeting and talking about the farming practices and tasting their coffees made it clear that Coffee Island shares the same ideals on coffee, as them. And so begins our co-operation with the Pacas, which was sealed with the trip the Coffee Island team took to El Salvador in order to meet the family in person and inspect their farms. Having completed a full year of prosperous co-operation and exclusive distribution of the specialty coffee El Salvador Vista Hermosa, the Pacas family and Coffee Island decided to embark on a new venture with the distribution of a new specialty coffee, named El Salvador Pacamara.<\/p>\n<p><strong>\u00a0<\/strong><strong>Honorary Coffee Trees<\/strong><\/p>\n<p>The Pacas family is widely known, not only in El Salvador, but also around the world. Their relationship with coffee goes back five generations. In the year 1800, Jose Rosa Pacas, decided to explore the world of Coffee, by planting Arabica Bourbon variety trees on the slopes of the <strong>Apaneca Ilamatepec<\/strong> mountain. In 1905<strong>, Fernando Alberto Pacas Figueroa<\/strong>, discovered a natural mutation in some of the trees in his plantation. He gathered their seeds and after noticing that they had a higher yield, he planted them. The resulting Coffee trees where the first of a new coffee variety which was named <strong>Pacas<\/strong>, in his honor. Now, the 5<sup>th<\/sup> generation of the family continues to manage the <strong>Beneficio Tuxpal<\/strong> farm and continues caring for the land, with the same love and dedication. The Pacas family has developed a complete business on Coffee, starting from the seed all the way to your favorite beverage delivered to your mug. They have plant nurseries and farms, a processing station, they have their own exporting company, training centre, retailers, coffee grinders and roasters.<\/p>\n<p><strong>The birth of Pacamara<\/strong><\/p>\n<p>Our new <strong>MicroFarm Project, \u201cPacamara\u201d<\/strong>, is a hybrid Arabica Coffee, which was developed by the Salvadoran Coffee Research Institute (ISIC) in 1958. It is a combination of the <strong>Maragogype<\/strong> and <strong>Pacas<\/strong> varieties, a mixture which took almost 30 years of careful scientific research in order to be made available to producers in the late 80s. Its name is derived from combining the names of the varieties it comes from (<strong>Paca-Mara<\/strong>). The Maragogype, with tall trees and a large yield and the Pacas made up of short trees, resistant to bad weather conditions. The end result is a mid-sized coffee tree with rich foliage that produces many large round cherries, defined by a small characteristic bump.<\/p>\n<p><strong>Examining Pacamara<\/strong><\/p>\n<p>Processing Station: Cafe Tuxpal<\/p>\n<p>Owner: Federico Bolano Pacas<\/p>\n<p>Altitude: 1.550- 1.600 metres<\/p>\n<p>Location: Chalchuapa, Apaneca Ilamatepeq, El Salvador<\/p>\n<p>Processing: Dry<\/p>\n<p>Variety Arabica: Pacamara<\/p>\n<p>Certification: Direct Trade Coffee Island<\/p>\n<p>Harvest: February &#8211; May<\/p>\n<p>Flavor Profile: Apricot, caramel and flower aromas, high sweetness and a strong fruity acidity, rich creamy, fruity body, with a sweet aftertaste with hints of toffee.<\/p>\n<p><strong>Harvest &amp; Natural Processing<\/strong><\/p>\n<p>The coffee has been processed using the Natural process, which begins with hand picking the fruit and tossing them in special sifts, so that only the desired seeds remain. They are then laid out on elevated drying beds and are covered with canvas for the drying part of the process. At this point the phenomenon of osmosis takes place and the seed shrinks, as it loses its moisture and is enriched with all the sugars and aromas in the fruit and give the coffee its clean taste and complex fruit aromas.<\/p>\n<p>El Salvador Pacamara Natural can be consumed in any way, either at store or at home by brewing it for filter coffee (with V60, Chemex) or for cappuccino.
